➢ ½ cup of water with ½ cup of milk, warm a minute or so in microwave. Add ¼ cup sugar. (The sugar helps the yeast to rise.) Add one packet of yeast. Let rise in a turned-off microwave about 20 mins or so. If it foams and rises, your yeast is good.
➢ In mixer, beat 2 eggs in blender, add 3 TBSPs of butter. Pour water/milk mixture into mixer. Slowly blend in 3 ½ cups to 4 cups of flour. (This is where I free style it. Use as much flour as you can to make the dough kinda slowly drop off of the dough hook.) Will be a little sticky of course.
➢ Roll out onto a floured board and knead a few times until the dough looks smooth. Make a ball of it and place in a greased bowl and cover with cloth or plastic wrap. Let it set for 45 minutes (in microwave again) or until it rises nicely. (Almost doubles.)
➢ Take out and knead on floured board until it is pretty and smooth. (Sorry guys.) Handsome and smooth? Anywhoo….. about 50+ kneads. You’ll know it’s good when it looks and feels puffy and smooth in your hands. Almost hard to make more folds.
➢ This is where you can make rolls and put them in a greased pan and let them rise again for 30 minutes and then bake 350* for 20 minutes or …
….. just roll it out into a rectangle about 12×9″, butter with warm butter and add brown sugar and cinnamon mixture. (Crushed nuts would be nice with it too!) Roll from long side a little loosely so the middle won’t pop out in the oven. Don’t roll too tight. Cut into pieces from the middle, to that middle, to that middle, and so on. Place in greased pan and cover and let set almost AN HOUR or 1 1/2 hours. Bake on 350* about 30 minutes. Take a pic for Facebook (smile) and enjoy! Essie

2 ½ cups flour – 1 tsp salt – 3 TBS ice water – 1 stick butter – Mix, wrap and fridge.
