Double battered fish day

Wash and dry your tilapia (any fish). Mix three eggs with 2 tablespoons of water together in one bowl. In another bowl mix cornmeal and flour. Some people like flour by itself and some people like cornmeal, and then there’s people like me who like a mixture of both of them.

Dip your fish in the flour first, and then dip it in the egg batter, and then dip it back into the flour. It is a bit messy but it’s going to come out good don’t worry. Drop it into hot oil until it begins to float which would be approximately 15 minutes. Take it out and put it on a cutting board. I don’t like mine on paper towels because they soak in the grease and the fish becomes dry.

Add salt and pepper when you’re done. Enjoy!
