I just “half-boil” 1/2 box of macaroni, drain and shock with cold water. Set aside and let cool a bit. Add to huge bowl. Add your (meats) shrimp, sausage, crab, fish, bacon or any meat of your choosing with seasonings and a little heat (cayenne.) Add your chopped greens such as asparagus tips, chopped kale, anything you wish to add. Add some onions, garlic, etc. Stir and set aside. You’ll get the dry picture above. In pot, add one whole stick of butter. Melt the butter and fry your flour about 1 cup or so, (I don’t measure when I cook, sorry.) Make a nice ‘rue.’ When butter browns in the flour, add water (or milk is better) until the rue smooths out and is no longer so thick. Drop your various cheeses into the rue. Stir. Pour a couple of cups of the mac mixture into greased pan, layer more various cheeses on it, then pour some rue, more cheese, more rue, etc. Lay yellow cheese slices or bagged stringy type on top. Sprinkle some paprika on top and cook about ½ hour to 45 mins on 350* I hope I didn’t forget anything. Let me know how yours turns out. I’d like to see it!
