MICROWAVE CAKE IN A JIFFY!
I wasn’t going for looks here but I am sure that you will do better. I inverted them onto a plate. Lines are from the parchment paper.
1/2 cup oil
1 cup milk
2 tsp lemon
1 tsp vanilla
1 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1 1/4 cup flour
Place in parchment paper inside of microwave pan, 2/3rds of the way, and microwave approximately 4-6 minutes. You will see it rise and drop again. That’s okay. Stick toothpick in it and if it’s clean it is done. Make some syrup or icing if you’d like. (Heavy cream and strawberries, chocolate melted in heavy cream, etc.)
VARIATION: Add instant coffee and/or cocoa. I did and it was wonderful. Note: Not too much instant coffee or it will have a slight “burned” taste. Also, parchment paper allows you to invert it onto a plate easier and I used one piece for all three cakes. You can peel it right off.
Experiment with the recipe and enjoy!!!! ~ Essie

I don’t think it’s a secret that I’ve been trying to move closer to the Pittsburgh area. I am a Steeler fan and would like to remain one. I went to an apartment complex and they refused me. It wasn’t my credit. I said, “Okay.” I sent in the info that they asked for. It wasn’t my referrals. I said, “Okay.” I began to feel a little down about it but the “Jesus-in-me kept telling me to hold on. I couldn’t figure out why I just didn’t “size up” to them.
Early this morning when I got up around 4:30 a.m., I saw on the news where the apartment complex that I was trying to get into ……. is closing down for a Sheriff’s Sale. They are far behind in taxes! I was like, “Jesus!!!!!”
Moral: Sometimes when you get upset, maybe even at God about something that you’ve asked for and it seems that you either aren’t getting it or it may take some time….raise your hands and praise Him for His decision-making in your life. It just may not be the best that you are asking for. And for His Children, He gives the best.
And I say unto you, Ask, and it shall be given you; seek, and ye shall find; knock, and it shall be opened unto you. For every one that asketh receiveth; and he that seeketh findeth; and to him that knocketh it shall be opened. If a son shall ask bread of any of you that is a father, will he give him a stone? or if he ask a fish, will he for a fish give him a serpent? Or if he shall ask an egg, will he offer him a scorpion? f ye then, being evil, know how to give good gifts unto your children: how much more shall your heavenly Father give the Holy Spirit to them that ask him?
