My delicious experiement today. My Zucchini Cake came out so good! The outside was flaky and crispy like a homemade peanut butter cookie. Oh my! And I used Splenda with a touch of Brown Sugar. Twas lovely. Well, errrrr, I still have some left, didn’t eat much. I have to leave some for my kids. I like big chunks. I hate when someone gives you an ‘alleged’ Zucchini Cake/Bread and you can’t find the Zucchini! :)
